If you love spinach pie, this one is perfect for a light lunch or dinner.

1 (10 oz.) bag fresh spinach
1 (24 oz.) carton ricotta cheesse
1/2 cup grated Parmesan cheese
3 eggs, beaten
1/4 cup red bell pepper, chopped

Directions

Preheat oven to 350 degrees.

Grease a 9-inch deep pie plate.

Rinse off spinach, dry and tear into bite sized pieces.

In a large bowl, combine the spinach, ricotta cheese, Parmesan cheese, eggs and bell pepper; mix thoroughly. Spread mixture into the pie dish (make it a little thinner in the middle).

Making homemade pie crust is easier than you think. Here is a basic recipe for pie crust, yes, it really has just 4 ingredients. To make your pie crust even better, before starting, chill the bowl and pastry cutter in the refrigerator. Use ice cold water for the mix.

2 cups all-purpose flour
1 teaspoon salt
1 cup shortening
1/2 cup water

Directions

In a large bowl, combine the flour and salt. With a fork or pastry cutter, cut in the shortening until the mixture resembles coarse crumbs. Stir in the water until the mixture forms a ball.

Let’s face it, somedays you just want a meal like mom used to make (or dad, depending on your upbringing). But that doesn’t necessarily translate into wanting to whip up the dish for yourself. INGREDIENTS
2lb Red Snapper Fish
2 Cloves of Garlic
1 Green Pepper
Some Parsley
Spring of Thyme
1 Teaspoon of Lemon Juice
1 tablespoon of Fish Seasoning
6 Green Bananas
1 Cooking Onion
Salt & Pepper

METHOD
Have fished cleaned – scaled and gutted at the fish market. Cut fish in half and clean with lemon.
Fry onions, garlic and green pepper finely cut, until onions go golden brown

Add other ingredients with 2 cups of water or enough to cover then
